Featured Edible Weed in this Week's Box

Portulaca oleracea

aka Verdolaga, Purslane, Pursley, Portulaca, or Pigweed.

This succulent weed has a lemony zip, you may have seen them growing in... your yard? Well this plant has Omega-3 Fatty acids, vitamins A, C, and B Complex! My favorite way to eat it is raw, pick off all the leaves, throw it in the freezer to chill while I chop other veggies for a salad, and sprinkle them on top! That way you get the most nutrients. Its also great fresh in a salad or steamed or boiled with pasta and veggies.
